Glazed Salmon with mustard and brown sugar:
Is it Saturday night and you have nowhere to go? Then dig in your freezer and pull out that bag of salmon fillets. That's what I did when I created this yummy glaze recipe. Almost every recipe I found required lemon, and I didn't have any. I did have a lime, but my taste buds were wanting something sweet. I adapted a Martha Stewart recipe to fit the stuff I had in my cupboard. I just love how it turned out.
Ingredients:
2 salmon fillets
1/4 cup spicy mustard
1/4 cup brown sugar
salt, pepper, garlic powder
2-4 green onions
juice from 1/2 lime
1-2T canola oil
2 salmon fillets

Directions:
1. Line pan with foil and spray with cooking spray. Place fillets onto foil.
2. Heat thinly sliced onions in oil on medium heat 3-4 minutes until soft. Add all other ingredients and stir until warm. (1 to 2 minutes).
3. Brush or spoon 1-2 T of glaze onto each fillet.
4. Broil on top shelf of oven for 5-10 minutes until bubbly and done.
5. Serve with your favorite rice or steamed vegetables for a healthy, delightful dinner.
Note: I used the remaining glaze in my rice and veggies, which was so delish. But you could store in the fridge for a few days I'm sure.
